That’s where our Cooking for Two series comes in really handy. (Psst… even though it is called Cooking for Two, it is great for solo cooks too).

Over the years, Aunt Lou has been working on converting some of our tried and true favorites into recipes that make just two servings. These crock pot recipes for two are perfect for empty nesters, couples, or anyone who just wants a cozy meal without all the leftovers.
What I love about these recipes is that they still have all the flavor and comfort of the original versions, but they’re scaled down to make just the right amount. From hearty casseroles to simple chicken dinners, each one is easy to put together and perfect for a weeknight meal.
So if you’re tired of doing the math to cut down recipes or sick of throwing away food, these recipes are for you!
1. Honey Garlic Crock Pot Chicken with Rice for Two

This Honey Garlic Crock Pot Chicken with Rice for Two is flavorful and filling while still being easy to make. I love that it cooks up quickly and the honey garlic sauce is absolutely delicious. If you don’t mind one extra step on the stove top to thicken the sauce, it really takes this dish to the next level.
