How to Make Easy Creek Potatoes in an Oven

So my son has been asking for a few weeks for me to make Creek Potatoes, so now you have this easy oven recipe so you can have them too! They are so simple to throw together and give you wonderfully flavored potatoes to go with your favorite main dish. I like to take the bacon pieces and cut them into bite size pieces after cooking so everyone can have a little bacon with their potatoes.
We get asked from time to time for recipes with only a couple servings. This recipe will make enough for 2 to 3 adults or 2 adults and 2 children. If you happen to need to make these for a larger crowd, you can easily double or triple the recipe with a larger aluminum foil boat or by making two or three boats. You will want to watch it closely the first time you make it and allow extra time to adjust for the larger amount of ingredients to cook. These potatoes are a favorite whether they are served at a weeknight dinner at home or a huge gather of family and friends.

What You Need for Easy Creek Potatoes (Oven Recipe)
Ingredients Needed
- 2 medium size potatoes, peeled and sliced thinly, divided
- 1/2 medium onion, sliced, divided
- 4 pieces bacon, divided
- salt and pepper to taste
Equipment Needed
- Sharp knife (I really like this knife.)
- Cutting board
- Aluminum foil
- 2 quart baking dish
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 50 to 55 minutes at 350 degrees Fahrenheit

Easy Creek Potatoes
Ingredients
- 2 medium Russet Potatoes peeled and sliced thinly, divided
- 1/2 medium onion sliced, divided
- 4 slices bacon divided
- Salt and Pepper to taste
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Take your piece of aluminum foil and make it into a boat and place in a 2 quart baking dish.
- Spray your foil boat with cooking spray.
- Layer one potato's worth of thin slices in the bottom of your foil boat and sprinkle with salt and pepper.
- Spread out half of your onion slices on top of your potatoes.
- Lay 2 of your bacon slices on top of everything.
- Repeat layers and close up your foil boat.
- Cook for 50 to 55 minutes, until your potatoes are fork tender.
- If desired, cut the bacon into bite size pieces after cooking and serve with each serving of potatoes.
