How to Make Easy Beef Vegetable Soup in a Crock Pot

I had this idea I wanted to try out. You see, we love this Easy Crock Pot Tomato Soup in my house. So much so that my family asks for it often. The flavor is amazing. I got to thinking how it would be a good start for an incredible vegetable soup, and now you have this delicious Easy Crock Pot Beef Vegetable Soup!
It makes quite a bit, so I thought I would share some with my wonderful neighbors, Becky and Rita. When I talked to Rita the next day, she told me she is not usually a fan of vegetable soup, but she loved this soup, and it was the best she has ever had. The secret is in the base tomato soup recipe. It just takes this soup to the next level.
What You Will Need for Easy Crock Pot Beef Vegetable Soup
Ingredients Needed
- 1 lb ground beef, browned and drained
- 5 potatoes, peeled and cubed (I used Russet potatoes.)
- 12 oz frozen corn, kept frozen
- 8 oz baby carrots, cut into thirds (I used half a 16 oz bag.)
- 15 oz can diced tomatoes, drained
- 48 oz spaghetti sauce (2 – 24 oz jars)
- 24 oz evaporated milk (2 – 12 oz cans)
Equipment Needed
- Skillet and strainer or micro-cooker
- Vegetable peeler
- Sharp knife
- Cutting board
- Can opener
- Can strainer
- Stirring spatula
- 6 quart crock pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, it is finished when the carrots and potatoes have reached desired tenderness

Ingredients

Instructions
- Put all your ingredients in a 6 quart crock pot and stir until well combined.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring occasionally. It is done when the carrots and potatoes have reached desired tenderness.
