How to Make Fiesta Pork Loin in a Crock Pot

A while back I made this Fiesta Crock Pot Roast, and my family loved it. I thought the flavors might work well with a pork loin, and boy was I right! This Fiesta Crock Pot Pork Loin is not only absolutely delicious. The members of my home loved it, as well as my neighbors!
With only 3 ingredients, this recipe is super easy to put together. The crock pot does most of the work for you. Cooking the pork loin low and slow with the other ingredients makes it incredibly tender, juicy and flavorful. Whether you are new to cooking or a master in the kitchen, this recipe is a great one to make.
This pork loin is fall apart tender, so it was very easy to shred with two forks and stir into the juices. With the shredded pork, you can serve it on its own or on tortillas, on a bed of rice, on top of a taco salad, on a bun or over nachos. Is there something I missed? How to Make Fiesta Pork Loin in a Crock Pot
Ingredients Needed
- 3 lb pork loin
- 20 oz tomatoes with chiles (2 – 10 oz cans), undrained
- 1 oz pkg taco seasoning
- Optional: Tortillas, taco salad, tortilla chips, buns or rice, etc.
Equipment Needed
- Can opener
- 6 quart crock pot
- 2 forks
- Wooden spoon
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 8 to 10 hours on low
- Shredding Time: 5 minutes

Fiesta Crock Pot Pork Loin
Ingredients
- 3 lb pork loin
- 20 oz tomatoes with chiles (2 – 10 oz cans), undrained
- 1 oz pkg taco seasoning
- Optional: tortillas, nachos, taco salad, rice or buns for serving
Instructions
- Place your pork loin in a 6-quart crock pot.
- Add in your remaining ingredients.
- Cover and cook on low for 8-10 hours.
- Shred with two forks and serve whatever way suits your fancy.
