How to Make Mexican Style Tater Tot Casserole in a Crock Pot

So I was looking around Pinterest the other day and found a recipe that got me thinking. While I went in a majorly different direction with this Mexican Style Crock Pot Tater Tot Casserole, I am thankful for the recipe that got me thinking!
You might have noticed we like tater tot casseroles around my house. I have made a ton of different variations and love each one of them! (You can find the full list of tater tot casseroles here.) This recipe makes a great addition to the collection!
When using a broiler, there is a trick to it. Want to know the secret to using a broiler? You never look away. Not even for a second. You see, a recipe can go from golden perfection to burnt mess in an extremely short amount of time (think seconds, not minutes). Trust me, I have learned this lesson the hard way. If you are not comfortable using your broiler, or do not have one available, don’t worry. It is just an optional step, not required. This recipe is great with or without broiling.
What You Will Need
Ingredients Needed
- 2 lbs ground beef, browned and drained
- 10.75 oz can tomato soup
- 10.5 oz can diced tomatoes with chiles, undrained
- 1/2 cup onion, chopped
- 1 teaspoon garlic powder
- salt and pepper to taste
- 2 cups Mexican blend cheese
- 32 oz bag of frozen tater tots, kept frozen
Equipment Needed
- Sharp knife
- Cutting board
- Skillet and strainer (I love my on pot strainer) or micro cooker
- Measuring cups
- Measuring spoon
- Large bowl
- Stirring spatula
- Casserole Crock Pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 2 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

Mexican Style Crock Pot Tater Tot Casserole
Ingredients
- 2 lbs ground beef browned and drained
- 10.75 oz can tomato soup
- 10.5 oz can diced tomatoes with green chiles undrained
- 1/2 cup onions chopped
- 1 teaspoon garlic powder
- Salt and Pepper to taste
- 2 cups Mexican Blend Shredded Cheese
- 32 oz frozen tater tots kept frozen
Instructions
- In a large bowl, mix together all your ingredients except your cheese and tater tots
- Spread this mixture evenly in a lightly greased casserole crock pot
- Sprinkle your cheese across the top
- Put the frozen tater tots on top in one layer
- Cover and cook on high for 2 hours, turning your insert halfway through cooking if your unit does not cook evenly
- If desired and your insert is broiler safe, place your insert in the broiler on high on a shelf set in the middle of your oven for 1-2 minutes (do NOT walk away and watch constantly so you do not burn the top)

Can I use cauliflower or broccoli with cheese tater tots instead?

I haven’t tried cauliflower or broccoli in this recipe, but think it might work. I would cut the cauliflower or broccoli into small pieces since this recipe has such a short cook time. If you give it a try, let me know how it goes!

IF you cook the tater tots before and brown or make them crispy and then put them on top and finish cooking the recipe in the crock pot will the tater tots burn?
I haven’t tried cooking the tater tots first. I don’t think they will burn. The moisture from the crock pot might take away some of the crispness while cooking though. If you give it a try, let me know how it goes!
