How to Make Perfect Chicken Dinner in a Crock Pot

As you may know, one of my absolute favorite recipes Momma would make when Cris and I were growing up was her roast and veggies in her crock pot. I loved it so much that she would send a full roast and veggies with me to college when I would come home for a weekend. As Michael and I were thinking about what we would like to eat this week, Momma’s Perfect Crock Pot Roast came to mind, and Michael suggested chicken. What a brilliant man I married! So, now we have this delicious Perfect Crock Pot Chicken Dinner. You are going to love it!
I used boneless, skinless chicken thighs. I know some people prefer white meat though. So, if you would like to use boneless, skinless chicken breasts, that will work. You will either have a longer cooking time (probably closer to 6-8 hours) or you can cut your chicken breasts into thigh size portions. Either way, you will have a lovely dinner to serve yourself and those you love!
What You Will Need
Ingredients Needed
- 2.5 boneless, skinless chicken thighs
- 5 potatoes peeled and sliced into wedges
- 1 bag of baby carrots
- 2 medium onions halved
- 2 pkgs chicken gravy mix, divided
- 2 cups cold water
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Measuring cup
- Small bowl
- Fork or small whisk
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 4 to 6 hours on low (This is total time. One hour before this is ready, you will take 1 cup of cold water and mix it with the last packet of chicken gravy mix before pouring it over everything in your crock pot.)

Perfect Crock Pot Chicken Dinner
Ingredients
- 2.5 lb boneless, skinless chicken thighs
- 5 potatoes peeled and sliced into wedges
- 1 bag of baby carrots
- 2 medium onions halved
- 2 pkg chicken gravy mix
- 2 cups water
Instructions
- Spray your crock pot with cooking spray
- Place your chicken in your 6 quart crock pot
- Surround your chicken with your potato wedges, onion halves and carrots
- Mix together one of your chicken gravy mixes with 1 cup cold water
- Pour over your chicken and veggies
- Cover and cook on low for 4-6 hours (total)
- An hour before serving, mix together your remaining chicken gravy mix and 1 cup cold water
- Pour over chicken and veggies
- Cover again for the last hour of cooking.

Do you use brown gravy mix or chicken gravy mix?? In the list of Ingredients it says 2 pkgs brown gravy mix not Chicken gravy???
Sorry about that! It is supposed to be chicken gravy mixes. I have fixed the recipe card. Enjoy!

Do you shred chicken thighs and how do you cut onions size?
I did not shred the chicken, but you can if you want. As for the onions, I cut the down the middle and spaced out the halves around the crock pot. Enjoy!
