How to Make Tex Mex Chicken Tacos in a Crock Pot

When life gets busy, all I really want is an easy recipe to make that will taste good. Can anyone else relate? These Tex Mex Crock Pot Chicken Tacos are just the ticket! This recipe is as close to a dump and go recipe as you can get without actually being a dump and go recipe. You just have to dump the ingredients that go on top of the chicken in a bowl, mix them up real quick and then dump them on top of the chicken. It is as easy as can be!

What You Will Need for Tex Mex Crock Pot Chicken Tacos
Ingredients Needed
- 4 lbs boneless, skinless chicken breasts
- 16 oz salsa
- 15 oz can northern beans, drained
- 15 oz can black beans, drained
- 11 oz can mexi-corn, drained
- 1 oz taco seasoning packet
- Tortilla shells
- Shredded taco style or Mexican style cheese
Equipment Needed
- Can opener
- Can colander
- Large mixing bowl
- Stirring spatula
- Tongs
- Additional large mixing bowl (if you do not want to shred the chicken in the crock pot insert)
- Two forks
- 6 Quart Slow Cooker
Time Needed
- Prep Time: 5 to 7 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, rotate your chicken (so the center pieces are switched with the outer pieces) halfway through the cooking time so everything will cook evenly
- Shredding of Chicken Time: around 5 minutes

Tex Mex Crock Pot Chicken Tacos
Ingredients
- 4 lb boneless skinless chicken breasts
- 16 oz jar salsa
- 15 oz can Great Northern beans Drained
- 15 oz can black beans Drained
- 11 oz Can Mexi-Corn Drained
- 1 oz pkg taco seasoning
- tortillas
- Shredded Mexican Blend Cheese OR
- shredded taco blend cheese
Instructions
- Place 4 lb boneless skinless chicken breasts in the bottom of your 6 quart slow cooker.
- Put 16 oz jar salsa, 15 oz can Great Northern beans (drained), 15 oz can black beans (drained), 11 oz Can Mexi-Corn (drained) and 1 oz pkg taco seasoning in a large bowl and mix until well combined.
- Pour the mixture over the chicken.
- Cook on low for 6-8 hour or high for 3-4 hours, until chicken easily pulls apart with two forks, stirring halfway through the cooking time.
- Shred meat with two forks (either in the crock pot or in a bowl) and stir well.
- Serve the chicken mixture in tortillas topped with Shredded Mexican Blend Cheese or shredded taco blend cheese.
