What You Will Need for Beefy Cheesy Crock Pot Potato Casserole for Two

Ingredients Needed

  • 1/2 lb ground beef, browned and drained
  • 1 medium to large russet potato, peeled and sliced thinly
  • 1/8 cup diced onion
  • 3 slices American cheese
  • 2/3 cup cream of celery soup, undiluted (You can also use cream of mushroom. In a pinch, I have even used cream of chicken.)

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: low for 4-6 hours or on high for 2-3 hours, rotating the insert halfway through cooking if your unit does not cook evenly (the potatoes should be tender and the cheese bubbly)

    Ingredients

    • 1/2 lb ground beef cooked and drained
    • 1 large potatoes peeled and sliced thinly
    • 1/8 cup onion diced
    • 3 slices American cheese torn into pieces
    • 2/3 cup cream of celery soup undiluted (You can also use cream of mushroom. In a pinch, I have even used cream of chicken.)

    Instructions

    • Lightly spray your 2.5 quart slow cooker or 2.5 quart casserole crock pot or 3 quart slow cooker or 4 quart slow cooker with cooking spray.
    • Evenly lay potato slices and diced onions in the bottom of your crock pot.
    • Top with ground beef.
    • Place cheese slice pieces on top.
    • Spread your soup over everything.
    • Cover and cook on low for 4-6 hours or on high for 2-3 hours, rotating your insert halfway through cooking time if your insert does not cook evenly (the potatoes should be tender and the cheese bubbly).
    • Gently stir everything together and serve.
