How to Make Brown Sugar Bacon Crackers in an Oven

I have a vague memory of Mikey making these amazing crackers years ago. I wanted to give them a try. He thought he got the recipe out of Gramma’s old Betty Crocker Cookbook from the 70s, but wasn’t sure. I knew there were only 3 ingredients and guessed I could figure out the rest. So, now you can make these incredible Brown Sugar Bacon Crackers as well!
It may not seem like the step to put an oven safe cooling rack on top of your cookie sheet is an important step, but it most definitely is if you are wanting the cracker to stay have traditional crunchy ends with buttery middle. If you don’t, you end up with something more like my delicious Crock Pot Bacon Bites. Don’t get me wrong, both recipes are wonderful! I just want you to get what you think you are getting. Without the cooling rack, your crackers soak up all the yummy cooking juices from the bacon and brown sugar, so the ends don’t stay crunchy. Again, they taste incredible, but they just are just different.
What You Will Need
Ingredients Needed
- 32 club crackers
- 16 slices bacon, sliced in half and divided (Use regular cut bacon or thin cut bacon, NOT thick cut bacon.)
- 1/3 cup brown sugar, divided
Equipment Needed
- Sharp knife
- Cutting board
- Measuring spoon
- Baking sheet
- Aluminum foil
- Oven-safe cooling rack
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 20 to 25 minutes at 350 degrees Fahrenheit
- Cooling Time: 5 to 10 minutes

Brown Sugar Bacon Crackers
Ingredients
- 32 club crackers
- 16 slices bacon sliced in half and divided (Use regular or thin cut bacon, not thick cut bacon)
- 1/3 cup brown sugar divided
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Cover a large cookie sheet with aluminum foil (for easy clean up) and place an oven-safe wire cooling rack on top of the aluminum foil.
- Take a half of strip of bacon, wrap it around a cracker and place it on the wire cooling rack.
- Repeat for the remaining crackers and bacon.
- Take a 1/2 teaspoon measuring spoon and sprinkle 1/2 teaspoon of brown sugar on top of each bacon wrapped cracker.
- Bake for 20-25 minutes, until the bacon is crisp and the brown sugar is bubbly.
- Let it cool on the cooling rack for 5-10 minutes before serving.

We have been making these for years. Our special Super Bowl snack. I always wrap bacon over the brown sugar, this looks like a less messy way to do them 🙂
Can you make these ahead of time? If so, how long before would you recommend?
We haven’t tried making these ahead of time. They disappeared the same day.
I used thicker bacon and left them another15 minutes. The bacon was raw. Don’t think I’ll make this again.
I’m so sorry this recipe did not work out with the thick cut bacon. This recipe was not intended to be made with thick cut bacon. I have added a note to the post and the recipe card to make that clear. I hope you find a recipe in our library of almost 2,000 recipe that you enjoy!
