How to Make Bub’s Easy Brunch Casserole in an Oven

My 12 year old is quite the home chef. He loves to come up with ideas for recipes and give them a try. I can’t imagine where he gets that from. 😉 Anyway, a while back, he had an idea for a breakfast casserole. He wanted me to give it a try in a crock pot, and it was delicious. Recently, he has been asking me if we could try making it in the oven. We did just that today, and now you have Bub’s Easy Brunch Casserole. Don’t let the name fool you though, this would be great for breakfast, brunch or brinner (breakfast for dinner). It is always a real crowd pleaser. I am pretty proud of my little recipe creator!

What You Need for Bub’s Easy Brunch Casserole
Ingredients Needed
- 1 lb mild ground breakfast sausage, cooked and drained
- 10 large eggs
- 1 1/4 cup heavy whipping cream
- 5 cups frozen shredded hash browns, kept frozen
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
Equipment Needed
- Skillet and strainer or micro cooker
- Large mixing bowl
- Whisk
- Measuring cups
- Cooking spray
- 9 x 13 baking dish
Time Needed
- Prep Time: 10 to 15 minutes, plus however much longer it takes for your oven to preheat to 350 degrees Fahrenheit
- Cooking Time: 35 to 40 minutes, rotating your baking dish half way through the cooking time if your oven does not cook evenly

Bub’s Easy Brunch Casserole
Ingredients
- 1 lb ground breakfast sausage cooked and drained
- 10 large eggs
- 1 1/4 cup heavy whipping cream
- 5 cups frozen shredded hashbrowns kept frozen
- 1 1/2 cups Shredded Cheddar Cheese
- Salt and Pepper to taste
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Brown and drain 1 lb ground breakfast sausage.
- While your sausage is cooking, pu 10 large eggs in a large bowl and use a whisk to beat the eggs.
- Stir in 1 1/4 cup heavy whipping cream until well blended.
- Add your cooked and drained ground sausage and Salt and Pepper to taste to the egg mixture and stir until well combined.
- Lightly spray a 9 x 13 baking dish with cooking spray.
- Pour your egg mixture in the dish.
- Sprinkle 5 cups frozen shredded hashbrowns evenly across the top of the egg and sausage mixture.
- Sprinkle 1 1/2 cups Shredded Cheddar Cheese evenly on top of everything.
- Bake for 35-40 minutes, turning your dish half way through the cooking time if your oven does not cook evenly. It is done when the middle is set.
