Meal Planning on a Budget
Aunt Lou here.
This week for Budget Meal Plan: Week 15 we are going to using meats that are generally cheaper per pound. The crock pot is a great way to make these cheaper cuts of meat. Combined with a few ingredients, they become wonderful dishes that you will want to make again and again.
Chicken and pork are generally more cost effective than beef, so we will be using them this week. Don’t worry about getting bored though. I have put together some amazing recipes that are packed full of flavor and other ingredients to keep things interesting. I hope you enjoy these recipes as much as my loved ones and I do!
Budget Meal Plan: Week 15
Monday: Crock Pot Salsa Rice Sausage Casserole with optional side of Crock Pot Black Beans
Tuesday: Crock Pot Fiesta Chicken and Beans (This is a pretty hearty recipe on its own and is considered a one pot meal. So you don’t really need a side dish to go with it. I love how one pot recipes give you less clean up and less cooking to do!)
Wednesday: Leftovers from Monday and Tuesday (The flavors from the recipes of Monday and Tuesday complement each other very well. What my family usually does on these nights is take a little from each of the leftovers to have a plate of yumminess. It is a fun way to switch up leftovers night.)
Thursday: 3 Ingredient Crock Pot Buffalo Pork Chops (Low Carb) with Creamy Crock Pot Ranch Potatoes
Friday: Creamy Crock Pot Chicken Noodles with optional side of Homemade Crock Pot Bread (I just love a piece of bread with my chicken noodles, but the creamy chicken noodles are hearty enough on their own if you don’t like bread with yours.)
