I remember the first time I ever had this recipe. It was actually the stovetop version. Michael and I had just started dating. Truth be told, I am pretty sure he was just trying to impress me. Well, it worked! I can’t even count the number of times we have had this over the almost four years of our marriage.

This Crock Pot Sausage, Green Beans and Potatoes is an instant family favorite!

You all know how much I love my crock pot, so I couldn’t resist cRockin’ this recipe.

It is still as easy as the stovetop version from Michael’s bachelor days, but it was great for when I worked outside of our home.  Instead of making it when I got home from work and having to wait for it to get done, I could throw it together before I left for work (or better yet, have Michael throw it together!) and have it waiting for me when I arrived home after a long day of work!

Shopping List

  • 2 pkgs of traditional rope turkey sausage cut into half inch slices
  • 6-8 potatoes peeled and cubed
  • 4 cans of green beans
  • 1 small onion chopped
  • salt & pepper to taste
  • red pepper to taste

  • For this Crock Pot Sausage, Green Beans and Potatoes, I used my Travel Crock Pot. You will want to use a 5-6 quart crock pot for the full recipe. If you only have a smaller crock pot, I would recommend cutting this recipe in half because the full recipe definitely needs a large crock pot.
  • All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.

      We have cooked it on the stovetop before. We usually add everything in and let it boil until the potatoes are soft. Then let it simmer for another 30-45 minutes. Enjoy!

  3. I have fresh green beans from the garden. How much liquid would you use. I have a 6 qt crock pot.

    I really should make a comment on this recipe. I make this one quiet often because we all love it. It’s one of my go to recipes and was moved from my recipes folders into my ‘family favorites’ folder so it won’t get lost in the thousands of others I have saved over the years. When I create my menu and grocery list for shopping trips, I will check in the family favorites folder first and when short on time to make the menu and grocery list, at times I have created the entire week from the family favorites folder only. It’s much quicker that way as I already KNOW it’s a tried and true recipe I know anyone in the family will eat.

    For anyone reading through comments to get an idea if you should try this recipe if it’s your first time seeing it, YES! MAKE this one. You will be happy. I’ve also been known to toss in bacon if I want to change the flavor just a little. Usually I make the recipe as written however since it really needs nothing more.

      I haven’t tried it with canned potato slices, but if you like them, I think it could work. I would guess that you will need to reduce the cooking time so that the potatoes don’t fall apart. If you give it a try, let me know how it goes! Enjoy!

    We made this and though my kids didn’t care for the texture of the sausage after it cooks for the long period of time, my husband and I LOVED this. This dish turns the green beans and potatoes into something amazing. This is one of the FEW dishes where the leftovers were consumed with no problems at all. It is awesome. Thanks for sharing.

    What other things can you use in subsitute for potatoes? I have made this plenty of times and even added sauerkraut, but now trying to stay away from the starches, so what could I put in there as a filler?

  12. I am not a big fan of any type of sausage but I decided to try this for my family since they love polish sausage. I was very surprised at how good this was. And so simple with very few ingredients. Will make again for sure!

  13. If you use frozen green beans, use chicken broth instead of water. Give it a little oomph!

  15. You might try carrots with this dish. If you use froozen vegetables add a cup of beef broth for the liquid.

  16. What is red pepper? Do you mean cayenne pepper?

    1. I believe ground red pepper and ground cayenne pepper can be interchanged. My jar says red pepper but after googling it, it looks like they are about the same. Some sites do say that cayenne pepper has a bit more kick though while others say that they are exactly the same. So, if you are sensitive to heat, then start with less if you are using ground cayenne pepper and add more to taste.

  17. Can you use any type of sausage in this recipe?

    1. If you have (or like better) regular rope sausage, that would be good too. We just happen to use turkey rope sausage. Enjoy!

    2. What is a 2 inch package of rope sausage? Does not ound like very much sausage. Could this mean 2 pound package? Most sausage I buy is by weight.

      The typo is my fault. We are updating our recipe plugin and it has this very inconvenient feature of flipping words around on me and I didn’t catch it. The “inch” reference was supposed to be in reference to cutting into half-inch pieces. The recipe calls for 2 packages of rope (or smoked) sausage. The packages in our store range from 13oz to 14oz usually. Hope that helps! Sorry about that. I got it fixed.

  22. if I wanted to use frozen green beans, what kind and how much liquid would I substitute?

    1. I would use four bags of 12 oz cut green beans. I would add one or two cups of water according to how much liquid you would like. Enjoy!

      I haven’t tried this in smaller portions. I think the cooking time would be similar, maybe start checking it closely around 5-6 hours. As with any new recipe, you’ll want to watch it the first time you make it so that you’ll know you exactly how your crock pot cooks it with the smaller portions. Enjoy!
