Garlic Butter Crock Pot Pork Chops (Low Carb)
Ingredients
- 2 lbs boneless pork loin chops
- 4 tbsp butter
- 1/2 cup chicken broth
- 4 cloves garlic minced
- salt and pepper to taste
Instructions
- Place all ingredients in a 4 quart slow cooker.
- Cook on low for 2 hours or high for 1 hour, until pork reaches proper internal cooking temperature
- Serve with juices
Notes
- Make sure you add at least a pinch of salt. Adding a small amount of salt brings out the other flavors.

This recipe sounds delicious, but I would add the step of browning the chops first. The picture is kind of unappetizing. Now that we have multi-cookers that often have a saute or browning feature in addition to slow cooking, it can all be done in the same cooking vessel. You don’t have to dirty a pan to get nicely browned meat!

How thick should the chops be? We like thick chops

I used what I would call medium cut chops (not thin, not thick). I haven’t tried this with thick chops, but think it should work just fine. It will probably take a little longer to reach safe internal temperature. Watch it closely the first time you make it and use a meat thermometer so you know how to adjust the time. If you give it a try, let me know how it goes!
