How to Make Balsamic Roast in an Electric Pressure Cooker

One of my favorite songs is Breathe by Jonny Diaz. Part of the lyrics says: “So much to do in so little time, it’s a crazy life”…that’s how life feels a lot of the time. Right? So what about when you want a yummy home cooked meal on the table in this crazy life? Like, maybe, a roast? Well, this recipe is a faster version of Cris’ awesome Crock Pot Balsamic Roast. It is sliceable, still super tender and a great new flavor for a roast to boot!

Instant Pot Balsamic Roast Recipe
Instant Pot Balsamic Roast
Ingredients
- 2 Tablespoons Bacon Fat or other oil
- 3 lb Chuck Roast
- Salt and Pepper to Taste
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Minced Dry Onion
- 1 Tablespoon of Sugar or Sugar Substitute
- 1/2 Cup Balsamic Vinegar
- 1 Cup Beef Broth
- Fresh Rosemary and Thyme to Taste
Instructions
- Salt and pepper your roast and then brown on each side in the bacon fat in your 6-quart Instant Pot on saute
- In a bowl, mix together garlic, onion, sugar, vinegar and broth.
- Pour mixture over your roast and top with the herbs.
- Seal and cook on manual high for 60 minutes
- Natural release for 15 minutes, then quick release
- Remove herbs and serve roast with sauce.
