This week we are doing something a little different for Budget Meal Plan: Week 9. We are going to make recipes that can be made using leftovers.

When the holidays roll around each year, there always seems like there are quite a few leftovers once the main meal is finished. (This also seems to happen at any type of big pitch-in…umm potluck for people not living in Southern Indiana…feast.) So, instead of letting those leftovers go to waste in the fridge or on the counter, I’m thinking we use those leftovers to make something new and delicious! It serves two purposes, we are reducing waste and saving money! Win win!
Now, if you come across this menu when it is not near a holiday, don’t worry. You can still make these recipes with ingredients you just picked up from the grocery store. Whether you are making the recipes from this menu with leftovers or something you just bought, I hope you enjoy them as much as my family and I do!
Budget Meal Plan: Week 9
Monday: Crock Pot Ham and Cabbage (Low Carb) with an optional side of Air Fryer Roasted Vegetables
Tuesday: Crock Pot Turkey Noodle Soup with and optional side of Creamy Crock Pot Corn (We don’t always make a side to go with this because it is really filling. It is totally up to you.)
Wednesday: Leftover Crock Pot Turkey Noodle Soup with optional Air Fryer Roasted Green Beans as a side
Thursday: Crock Pot Farmer’s Pie (You can make this recipe with leftovers, or it is a great holiday meal substitute if you don’t want to make the whole big feast.)
Friday: Crock Pot Turkey Tortilla Soup (This is soup has it all, so you don’t really need a side with it.)
