How to Make Cheesy Chicken Pie in a Crock Pot

We loved the Crock Pot Cheeseburger Pie I made a while back. So, when Cris suggested I try this Cheesy Crock Pot Chicken Pie, I was all for it!
I made this delicious recipe last weekend while we are all camping at Camp Lou-da-Cris. The family gobbled it right up. We all loved it for the delicious flavor and how filling it is, however, I also loved it because it was easy to throw together! I was able to cook up the chicken (making my camper smell amazing by the way) quickly, and while the chicken was cooking, I could prep everything else. I loved how super simple it was to make. When you are having a good time camping, you don’t want to spend a ton of time cooking, and with this recipe, I didn’t have to!
The result was a delicious meal we all enjoyed. I am guessing you and your loved ones will enjoy it as well!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken, cubed
- Extra virgin olive oil, enough to cover the bottom of your skillet
- 1 onion, chopped
- salt and pepper to taste
- 1.5 cups Velveeta, cubed
- 3/4 cup milk
- 3 eggs
- 1.5 cups all-purpose baking mix
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cups
- Medium bowl
- Spoon or whisk
- Skillet
- Wooden spatula
- 6 quart slow cooker
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 90 minutes to 2 hours, turning your insert halfway through if your slow cooker does not cook evenly

Cheesy Crock Pot Chicken Pie
Ingredients
- 2 lbs boneless, skinless chicken breast cubed
- extra virgin olive oil enough to cover the bottom of your skillet
- 1 onion chopped
- 1.5 cup Velveeta (or equivalent) cubed
- 3/4 cup milk
- 3 eggs
- 1.5 cup all-purpose baking mix
- salt and pepper to taste
Instructions
- Brown your cubed chicken with your onion, salt and pepper in your extra virgin olive oil
- Pour your chicken mixture into a slightly greased 6 quart slow cooker
- Top your chicken with your cheese
- Mix together your remaining ingredients and pour evenly over everything
- Place 3-4 paper towels under your lid and cover and cook on high for 1 1/2-2 hours, until it can pass the toothpick test, turning your insert halfway through the cooking time if your crock pot does not cook evenly
