My family devoured the Crock Pot Taco Mac Casserole I made a little while back. The kids still bring it up and tell me I have to make it again. So, it got me to thinking, what about when you aren’t in the mood for tacos (if that is possible…not sure ๐Ÿ˜‰ ). However, I didn’t want to just take the taco seasoning out without adding some other kind a flavor. That’s where my “secret” ingredient comes in. Just a little bit gives this recipe a great pop of flavor!

Ingredients

  • 2 cups uncooked macaroni cooked al dente and drained
  • 2.5 lbs ground beef cooked and drained
  • 2 cloves garlic minced
  • 12 oz can evaporated milk
  • 1 1/2 cups milk
  • 16 oz block Velveeta cubed
  • 1/2 cup butter melted

Instructions

  • Mix together all of your ingredients in a large bowl
  • Pour into a lightly greased casserole crock or 6-quart crock pot
  • Cover and cook on low for 3-4 hours, stirring occasionally

      I haven’t tried cooking this one on high, but think it should work. As always, watch it closely the first time you make it, so you can adjust the cooking time as needed. Enjoy!

      I haven’t tried this recipe with any other kind of cheese. You could try using the kinda of cheese your family usually likes in mac ‘n cheese. It might change the texture though depending on what kind of cheese you use. If you give it a try, let me know how it goes!

    2. Use cheddar or sharp cheddar and white American cheese+a little asiago
      White American makes all the difference
      I usually use about 1lb of sharp cheddar and 3/4 lb white american+1/4 asiago

  6. Could you add the pasta in uncooked to avoid the noodles getting mushy?

      We didn’t have a problem with mushy noodles. Just make sure you don’t cook your noodles past al dente. I worry that adding them in completely uncooked will leave you with at least some hard noodles at the end.

    It is missing something. The flavor is rather bland. Maybe some nutmeg or different kind of cheese. My family asked me to never make it again. Also, this recipe will feed about 10 people, so adjust for smaller family.

  9. I feel like an idiot. I mixed the beef raw with everything else. Should I cook it on high now?

      Oh no Lanka! I’m so sorry I couldn’t get back with you immediately. We don’t recommend using uncooked ground beef in the crock pot. If that ever happens again, I would make it in a large skillet on the stove.

  11. Sorry I’m not good with converting recipes but how would i convert this to my 4 quart slow cooker

      We actually have a feature on our site that takes all the guesswork out Chris! On each recipe card, there is a blue number at the top that is the number of servings. If you click it and slide the bar that appears to the number of servings you would like, it will adjust the ingredient amounts accordingly! So to make it fit in a 4-quart, I would take the 8 servings down to 4 or 6. Hope this helps!

      I have made this multiple times and haven’t had that problem. However, if you are worried about it, you can cook the noodles for less time before putting them in your crock pot. Let me know how it goes!

    Was excited to try this recipe but the noodles turned out beyond mushy, I cooked al dente prior to adding to the crockpot and cooked on low for 3 hours while i was at work. The sauce also looked sort of chalky, I followed the recipe to a T. Don’t think I’ll be trying it again as I had to throw the whole thing out. So bummed!

  14. I love this recipe- suggestion to make it one step better (if that is possible), pour a little Italian dressing over your portion. The seasonings it adds to the dish is fabulous.

    Hi! I made this for lunch today. I did all of the prep last night then placed everything in the refrigerator after it cooled. I had everything assembled by 8am this morning and let it cook for 4 hours on low. To make the cleanup a little easier, I used a crock pot liner. In hind-sight, my wife suggested spraying the liner the next time that I make this which will be soon!

    I kicked it up a notch for an adult meal by using one pound of ground beef and one pound of sweet Italian sausage. I also used 4 cloves of Garlic instead of 2.

    My adult family LOVED it!

  22. Could this be made on the stove instead of the crock pot? Like all ingredients on the stovetop for about 30 mins?

      I just tried it on the stove after finding out 1 pound of ground beef smelled sour so I only had 1 to work with. Had to halve the ingredients due to this, but I live alone so that didn’t matter for me. I eyeballed the amounts of cheese to use until it got to a taste I liked. It was really good, worked great on the stove. Took a little under an hour from start to finish.

  23. Can these be frozen if any is left over as there is only 2 of us.

      We haven’t tried freezing it so we can’t really say. My concern would be that the pasta might turn mushy on you. You could try cutting the recipe in half instead, just use a smaller slow cooker or put an oven safe bowl inside a large slow cooker to reduce the cooking area. Hope that helps!

    2. I would not freeze, the noodle don’t freeze well, and be mushy.
