Taco Crock Pot Tater Tot Casserole
Ingredients
- 1 lb ground beef
- 2 cloves garlic minced
- 1 oz packet taco seasoning
- 10.5 oz cheddar cheese soup
- 32 oz frozen tater tots
- 2 cups shredded cheddar cheese divided
Instructions
- Brown your ground beef with garlic and drain
- In a large bowl, mix all ingredients together, except for 1 cup of shredded cheese and pour into lightly greased 6-quart crock pot or casserole crock pot
- Top all the ingredients with your remaining cheese
- Cover and cook on low for 4-5 hours or high for 2-2.5 hours
- If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top

Have you ever doubled the recipe? I’m going to try this for a group of 12 people Sunday. If so do you cook it longer or will the tots fall apart?

I made this tonight and it is very good! I put mine in a tortilla with lettuce, tomato, onion, and cheese and rolled it up like a burrito! It was DELICIOUS!!!!

Do I mix the tator tots in with everything else or place in the bottom of crock pot frozen?

The recipe was Kinda edible but I definitely won’t be making it again. I cooked the tater tots completely frozen but they still ended up disintegrated. The tater tots at the top were alright and we basically picked off the top. I added green Chile which was good to give this dish at least a little more flavor. If I was gonna try to make this again I would skip the crock pot. Bake the tater tots till crisp, add the toppings and bake again.

Fairly average food, but a well-written recipe. I went for the 4 hour cook time on low and the tater tots were completely obliterated – they were just potato fragments. I served it with some habanero salsa, and that helped tremendously, giving it a fresher and spicier flavor to compliment the more mellow flavors that generally come out of slow cooker recipes.
If I did this again, I’d just bake the tots and top them with taco meat and fixings, rather than get the slow cooker involved.

Did you thaw your tots before using them? They need to be frozen so they don’t fall apart when you are mixing them.

Do you mix the taco seasoning according to package with the meat before mixing other ingredients or just put the powder in with everything else and mix it like that?

It’s such a bear to clean my crock that I almost exclusively use liner bags for everything i cook in mine. Do you see that being a problem with this recipe…??
