For our Budget Meal Plan: Week 2, we are going to make our menu based off of shopping sales using one meat more than once but changing things up with different sides. The mains are so yummy, you won’t mind having them twice!

Some meats are more expensive per pound than other meats. That’s just the way it is. However, if you watch your stores ads or just keep your eyes open when you are in the store, you can sometimes some really good deals on more expensive cuts. At our local store, there are these yellow stickers that say, “Manager’s Special” on them. You bet your booty that I am looking at those when I go into the store. There are times when I have been able to get a huge roast for about half the regular price. Given how far a roast can go in servings, I always grab them up when I see them marked down. Another cut of meat that can give you quite a few servings is a pork loin. I have had quite a bit of luck finding them on sale as well.
So by making a large roast and pork loin in one week, you only have to cook your main dish every other night. That’s a time saver, and if you watch to find them on sale, it is a money saver as well. Don’t worry about getting bored with the meal. You can easily have different sides with the leftovers so that you can enjoy something new each night.
Budget Meal Plan: Week 2
Monday: Crock Pot Roast Gravy Dinner (This one has the veggies made in the crock pot with the roast, so you will have an easy one-pot dinner ready when you get home from work.)
Tuesday: Leftover roast with Air Fryer Asparagus Bacon Bundles (If you want, you can also have your leftover potatoes and carrots as optional sides as well.)
Wednesday: Fiesta Crock Pot Pork Loin with Crock Pot Fresh Mexicorn and Crock Pot Black Beans
Thursday: Leftover Fiesta pork loin with Crock Pot Fiesta Mac n Cheese (Again, you can use your leftover side dishes from Wednesday to fill out your dinner.)
Friday: Crock Pot Calzone (This is a great way to change up Friday pizza night and so yummy!)
