If you are anything like me, I LOVE a good casserole to help me get food on the table, especially when I am short on time and need to feed my family. And, everyone I know is SUPER busy these days! There are kiddos schedules, work schedules and here in Indiana we are now in the middle of harvest schedules– a VERY busy time of year for my farmer girlfriends (and their families). So when our Indiana Corn farmers asked to sponsor a post of Easy Crock Pot Casserole Recipes, I told them we all could use a list of great crock pot casseroles in our life! ;).

Fun Fact: The corn you see being harvested in Indiana in the fall is NOT the same corn you throw into the Slow Cooker for our Crock Pot Buttery Corn on the Cob. The corn we are are serving up all summer long from the cob and all winter long from the can (or freezer) is Sweet Corn. The corn while the corn that my friends are busy harvesting this time of year is Field Corn which is turned into corn meal or corn flour and used in other foods like the corn chips we use in our Crock Pot Taco Casserole. Crunchy Cheesy Casserole- Boil 1# of Elbow Macaroni in water seasoned with 1T Salt, 1T Onion Powder, 1T Garlic Powder, 1/2T Smoked Paprika and a teaspoon of Chili Flakes (can remove if you are not a fan of Spicy- but it’s tolerable for those who cannot handle hot & spicy). Drain when Al Dente
Combine noodles with 2lb. Browned Ground Beef, 1 medium diced white or yellow onion, 1 large can of diced Mushrooms (stems & Pieces), Large Can of Tomato Soup, small can of Cream of Mushroom Soup, 1lb of Colby Jack Cheese Cubed, top with 2c. Shredded Cheddar or Colby Jack and French’s fried onions.
Bake at 350 degrees for 35-45 minutes
A perfect fall or winter comfort food dinner that will definitely fill you up. It is a family favorite that is requested very often and a perfect go to if you are looking for something easy.

My GO TO casserole is Chicken pot pie, but I use stuffing as the top “crust”. Super easy just shredded chicken (use leftovers or Canned Chicken also works) and kind of vegetable you have laying around (canned, frozen or leftover). I like to use the frozen mixed vegetable. Mix that together with either chicken gravy or cream of something soup. Throw it the baking dish top with prepared stuffing and throw it in the oven. I have also done this with the casserole crock pot. The stuffing doesn’t “crisp” up on the crock pot as does in the oven but still good.

My go to is a Mississippi Roast. A chuck roast, one packet of ranch dressing, one packet of au jus sauce, one stick of butter and a couple of pepperoncinis and you let it cook on low for 8 hours. *Not my own recipe* with a quick side of instant mash potatoes and rolls.

Actually, it’s not mine but hubby’s. Put in an inexpensive piece of chuck roast, add a ranch dressing packet, a country gravy packet, some water and go! Add the potatoes and carrots about half way through. He has it so he knows exactly how much and when and boy is it yummy!
