If you are anything like me, I LOVE a good casserole to help me get food on the table, especially when I am short on time and need to feed my family. And, everyone I know is SUPER busy these days! There are kiddos schedules, work schedules and here in Indiana we are now in the middle of harvest schedules–ย a VERY busy time of year for my farmer girlfriends (and their families). So when our Indiana Corn farmers asked to sponsor a post of Easy Crock Pot Casserole Recipes, I told them we all could use a list of great crock pot casseroles in our life! ;).

 

Did You Know?

Fun Fact: The corn you see being harvested in Indiana in the fall is NOT the same corn you throw into the Slow Cooker for our Crock Pot Buttery Corn on the Cob. The corn we are are serving up all summer long from the cob and all winter long from the can (or freezer) is Sweet Corn. The corn while the corn that my friends are busy harvesting this time of year is Field Corn which is turned into corn meal or corn flour and used in other foods like the corn chips we use in our Crock Pot Taco Casserole.   1. I love every one of your recipes I have tried. It is hard to pick a favorite one. One that everyone I share it with (I live in a senior apt complex) loves the pizza pop up one. I don’t remember the correct name but it is so good. I am going to be making the Mississippi pot roast soon. I’m very anxious to try that since I am not a real pot roast fan but this looks so good.

  2. My go to casserole is pork chops and potatoes. You brown your pork chops and layer then with potatoes and onions and then put a can of mushroom soup over it all and let it cook on low for 8 hours. What a great meal to come home to.

    You have awesome recipes…I don’t have a lot of time or extra dollars to spend on recipes.
    you guys have simple, ordinary recipes that use plain old staples!

    My favorite casserole is one my mom made a lot when I was a kid, Hamburger Casserole. Pretty simple, very tasty. Brown hamburger and onion, then add to cooked egg noodle, 1/2 can of evaporated milk, cream of mushroom soup, and lots of cheese. Good stuff!

    I don’t think I did it right. Stuffing chicken is one of the best and easiest casserole.

  7. My go-to dish is Meat lover’s Chili! I have to make it at least every other week. I keep the sausage and bacon, but instead of hamburger, I can usually find a london broil cut on sale and chunk it up! Thank you!

  11. My go to casserole is Chicken and Stuffing – I’ve added and changed the recipe over the years to keep up with evolving taste buds. My kiddo’s now make Chicken and Stuffing Casserole for their families : )

  12. Your chicken and dressing casserole is one of my favorite recipes to make. I serve it when family visit along with a salad. Of course some of them like to sprinkle hot sauce to the chicken for a little kick while they are eating.

    Hands down, the 1st Crock pot recipe I ever made from you…………the BBQ Chicken, then followed up by your recipe for the BBQ Ranch Chicken Salad……………………and yes, I have to eat them both, and must say the family & I are in hog heaven!!!!! Am lovin’ this one, am even going to make it for my family in CA when I travel there in December, THAT is how Good it really is!. Thank you for Sharing. Am Hooked.

    I have never had the chance to use any other kind of crock but my everyday, on/off, cook/warm crock pot brand crock pot, small but mighty indeed. It has provided loads of fantastic meals and cooks a mean pot of soup beans.

    I have so many favorites, but since this is in honor of Indiana Corn farmers, I’ll choose one a dear friend gave me. Spaghetti Corn. Makes a great side dish or a great make and take for family reunions, etc.
    It’s so simple, just corn (fresh or frozen), can of creamed corn and broken up spaghetti, 1 cup diced cheese, 1 stick of butter,and 2 tsp chopped onion mix together. Soooo Good!! Can be baked or put into crock pot.

    We love crock pot chicken and dumplings. it’s my families favorite dish in the crock pot and in the winter, we use it at least once a week along with our other favorite which is rotel chicken. Rotel chicken in the crock pot makes 2 meals, with one being tacos and the other being soup.
